When it comes to budgeting and saving money on food, Costco sits at the top of my list for groceries, produce, frozen foods and non-food items. One of the things I constantly do is to explore their frozen food offerings and man, they have plenty.

I recently found out about the cauliflower pizza which got introduced in their offering here in Austin and decided to give it a try.

First things first: money and how much does it cost?

The box comes at a nifty $14 and contains 2 pizzas as per the box which brings down the price per pizza to only 7 bucks.

What is this cauliflower pizza made from

Ingredients are super clean and non-GMO and, good news gluten-freaks, it is gluten-free! Here's a snapshot of the back of the box that shows what it's made from:

Long story short, the crust is made out of cauliflower combined with rice flour and tapioca starch to hold everything together, while no preservatives, artificial flavoring or sugar has been added. This pizza scores a 10 out of 10 simply for this reason.

Costco Cauliflower Cooking Instructions

COOKING INSTRUCTIONS – CONVENTIONAL OVEN:

  1. Preheat oven to 425°F.
  2. Remove overwrap and cardboard and place pizza directly on center oven rack.
    (For best results, cook pizza from frozen and do not use baking sheet.)
  3. Bake for 12-15 minutes or until cheese is golden brown.
  4. Let pizza cool for 2-3 minutes before serving. Enjoy!
    For proper food safety, follow cooking instructions to ensure that pizza reaches 165°F. Due to oven variances,
    cooking time may need adjustment. Refrigerate any unused portion promptly.

The Test!

Now, while the box instructions say to bake these pizzas at 425°F for about 12-15 minutes, I strongly recommend staying a bit below at 375°F for 6-7 minutes with a preheated electric oven (that's what I have).

When you take the pizza out of the box, it looks like this:

The vegetable look fresh and the entire thing sits on a carton circular pad which you need to dispose of before you throw the cauliflower pizza into the oven.

With a preheated oven, this beauty takes 6 minutes to bake and the final result is this:

How does it taste?

This thing is absolutely mouthwatering just looking at it. Crust is thin, it stays somehow flat yet crunchy, the cheese is gummy and tasty. The Italian sauce feels fresh, vegetables have their texture somehow intact and, overall, this definitely feels like a great pizza. It's not spicy at all and overall this stands firm as an insanely delicious pizza for just $7.

Last few comments:

  • the image on the box is totally exaggerated Vs. the real resut, as you can see. However the pizza is great and I would rate it a 8 out 10 if not better
  • In terms of how to serve this, eat this cauliflower while it's still warm from the oven. When cold, the crust might get a bit too crunchy for some people
  • Have a wine next to it. I recommend going with a Malbec and have a partner to share with, as this is a decently sized pizza
